dark chocolate truffles.

These are so so good! We have made them twice now. A nice little chocolate treat to fix those sweet cravings.
  • 1 tbsp coconut oil, melted
  • pink salt, to taste
  • 1 tbsp unsweetened cacao/cocoa powder
  • 1-3 tsp unsweetened almond milk
  • Stevia, to taste

Place liners into a 3 mini muffin tins (I have one large mini tin and used maybe 16 or so.
Combine coconut oil, 1/2 tbsp cocoa powder, and Stevia
Pour just enough mixture of mixture into each muffin tin so bottom is covered
Place muffin tray into freezer
Combine remaining 1/2 tbsp cocoa powder and Stevia, to taste in a small dish
Stir in enough almond milk that mixture thickens into a paste-like, creamy chocolate
Remove muffin tray from freezer
Spoon a small dollop of chocolate paste into each muffin tin
Pour remaining melted chocolate mixture into each muffin tin so paste is completely covered
Return tray to freezer until outside chocolate has hardened
Store in fridge until ready to eat
I failed to get a picture of these yummy treats after they were frozen, but they are so so good. If you are watching what you eat, these are a nice little treat to fulfill the sweet tooth. 

Side note: I made these all wrong! The recipe called for only THREE little mini's, not enough for the entire pan. Duh! No wonder why their was not enough to go around. lol So when you are making these, the amount in the recipe is only good enough for three little mini's.  Sometimes I don't know how I do these things haha I omitted the salt because I am not a salt fan, but if you are than there ya go! I literally just noticed what I did wrong as I typed this post up after making them! How we learn right???
