homemade white cheese dip.

By now you should know that I have a huge white cheese addiction, have for years. Sometimes I crave it like pregnant women crave pickles or whatever they may crave. If you haven't read about our favorite Mexican restaurant to know that we love white cheese, you should check it out. For awhile now, I have been on the hunt for the perfect white cheese recipe that tastes just like the restaurants, and trust me, their are a million out there that all claim they taste like the restaurant cheese.

After searching for what seemed like years, I came across Seeded At The Table's recipe and decided to try it. To be politically correct, it's really called Queso Blanco Dip but we like to call it "white cheese". This recipe is the closest to the actual restaurant white cheese I have ever tasted. Just fabulous.
The ingredients for this recipe was kinda hard to buy for. Not having ever bought any of this kinda stuff, it was a learning experience for me and turned out being really fun! The first thing I bought was 1.25lb block of white American cheese. When the dude at the deli said how do you want that sliced, I said "i need the entire block" lol He looked at me funny like um okay.
White American cheese was absolutely scrumptious! I found myself eating some of the cubed pieces before even making the dip and putting all the weird peppers in it. Oh my was it good. If Natalie would've been around, she would've been right there with me. She's a cheese lover like I am.
These little guys were hard to find since I am not a pepper fan on a regular basis. I couldn't find just regular pickled jalapeno juice, so I bought a jar of pickled jalapenos, and used the juice from the jar.
Chopped up the two little jalapenos and it was time to mix. Not shown because I forgot to take photos, is the milk, water, and cumin. The recipe calls for whole milk, but I used Vitamin D instead. Figured that's close enough. Next you put all the ingredients together in a bowl, microwave it for 5 minutes, stopping every minute to stir it. And bam that's it!  
Oh my goodness it is so very delicious! When Kev came home the day I made this, I had him reheat up the cheese and try it and he loved it too. I haven't made it since because I don't want to get too hooked on it, because it was so easy to make. Just hard to find all the ingredients in the store!

Here is the best white cheese recipe ever!
  • 1 1/4 (1.25) lb block White American Cheese (Land O'Lakes brand) cut into 1 inch cubes
  • 1/4 cup diced green chiles
  • 2 pickled jalapenos, chopped
  • 1 ounce pickled jalapeno juice
  • 2/3 cup whole milk
  • 1/2 cup cold water
  • pinch of cumin (optional)
Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as nice as a nice runny dip after all the cheese is melted.

Serve immediately as a dip with tortilla chips.
