After searching for what seemed like years, I came across Seeded At The Table's recipe and decided to try it. To be politically correct, it's really called Queso Blanco Dip but we like to call it "white cheese". This recipe is the closest to the actual restaurant white cheese I have ever tasted. Just fabulous.
Chopped up the two little jalapenos and it was time to mix. Not shown because I forgot to take photos, is the milk, water, and cumin. The recipe calls for whole milk, but I used Vitamin D instead. Figured that's close enough. Next you put all the ingredients together in a bowl, microwave it for 5 minutes, stopping every minute to stir it. And bam that's it!
Oh my goodness it is so very delicious! When Kev came home the day I made this, I had him reheat up the cheese and try it and he loved it too. I haven't made it since because I don't want to get too hooked on it, because it was so easy to make. Just hard to find all the ingredients in the store!
Here is the best white cheese recipe ever!
- 1 1/4 (1.25) lb block White American Cheese (Land O'Lakes brand) cut into 1 inch cubes
- 1/4 cup diced green chiles
- 2 pickled jalapenos, chopped
- 1 ounce pickled jalapeno juice
- 2/3 cup whole milk
- 1/2 cup cold water
- pinch of cumin (optional)
Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as nice as a nice runny dip after all the cheese is melted.
Serve immediately as a dip with tortilla chips.
